Indonesia, a Southeast Asian nation made up of thousands of volcanic islands, is home to hundreds of ethnic groups speaking many different languages. It is known for beaches, volcanoes, Komodo dragons, and jungles sheltering elephants, orangutans, and tigers.

Indonesian cuisine often demonstrates a savory, hot and spicy taste profile. Indonesians favor hot and spicy food. Thus Sambal, Indonesian hot and spicy chili sauce with shrimp paste, is a staple condiment on dining tables. Sambal can also be used for frying rice or noodles and serve as a single dish.

In 2018, the Indonesian Ministry of Tourism and Creative Economy chose five national dishes of Indonesia: Soto, Rendang Curry, Satay, Nasi goreng, and Gado-Gado.
